Job Responsibilities
Purpose
To assist Executive Chef to set the standards and maintain them to the Meydan standards.
Main Duties
- To attend daily meetings with the Executive Chef / Executive sous chef regarding menus.
- To work in any section of the kitchen when necessary, due to business pressure or employee shortages.
- To monitor all kitchens operating costs and takes corrective action where necessary to reduce expenses.
- To hold daily and monthly meeting with the pastry / bakery / amenity staff and report to executive chef.
To establish culinary standards specific to banquets which meet the needs of the target market.
Experience
- Preferably an Executive Pastry Chef or minimal 3 years experienced leading an international team. Buffet and fine dining experienced. 5 star experienced background in large production and fine dining.
- Banquet operation 500 – 1000 guest with extensive experience in handling outside catering operations. HACCP certified and can lead the teams of various nationalities.
- Creative, Innovative and Result Oriented.
- Good communication, leadership and interpersonal skills.
